Mushroom Pintxos

These delicious mushroom pintxos recipes are full of flavour and easy to make.

 

Mushroom and ham

Ingredients

8 mushrooms

1/2 green pepper

80 gr of Iberian acorn-fed ham

4 slices of bread

virgin olive oil and salt

Preparation

Wash the mushrooms, dry them and remove the trunks. Grill them with a pinch of salt, a few minutes on each side.

Cut the pepper into thin strips and sauté them with a little oil and a pinch of salt.

Put a mushroom on each slice of bread, then the stacked ham slices, another mushroom and top with sautéed pepper. Pierce with a skewer and serve.

 

Mushroom and prawns

Ingredients

8 mushrooms

1/2 green pepper

4 prawns

4 slices of bread

extra virgin olive oil and salt

Preparation

Wash the mushrooms, dry them and remove the trunks. Grill them with a pinch of salt, a few minutes on each side.

Peel the prawns, remove the intestinal cord and sauté them in a pan with a drizzle of olive oil and a pinch of salt for 2-3 minutes. Finely chop the garlic and parsley and add it at the last moment. Remove.

On each slice of bread mount two stacked mushrooms and on top of these place the shrimp with garlic. Pierce with a skewer and serve.
